Introducing our second Ethiopian release of the year! Tima hails from the expert hands of Sookoo Coffee and Ture Waji who has been producing some of my favorite coffees from the Guji zone the past few years. This washed lot represents everything we love about Guji coffees. If you're unfamiliar with the types of coffees that come out of this region, this is a must try.
This lot of was produced by 35 small holder farmers from the small village of Tima and processed at the Wessi Washing Station which is located approximately 415 kilometers away from the capital of Addis Ababa and sits at an elevation ranging from 2,000 to 2,200 MASL (WHOA!!!!) , offering optimal conditions for producing high quality coffee.
Sookoo Coffee is led by Ture Waji, who places utmost importance on quality and training. Close collaboration with local farmers enables knowledge exchange and skill development. From seed preparation to harvesting, post-harvesting, and processing, Ture himself and his team supervise every step meticulously, ensuring not only quality, but consistency year over year.
Their impact extends beyond coffee production. In an effort to give back to the community, they have led projects like the construction of roads and on school a couple of years ago, as well as donations of school supplies to the local children. This is Sookoo’s commitment to the next generation’s education.
This lot of Tima just brings a smile to our faces. Washed Guji coffee has been one of our favorite cup profiles in coffee for the last 16 years and Ture and Sookoo coffee has absolutely leveled up the game. Vibrant aromatics lift off the cup with floral and berry qualities. A sweet key lime note dominates up front with jasmine and stone fruits. As the cup starts to cool, honeysuckle and pink lemonade flavors take the lead and are balacned by a slick and coating mouthfeel.
This is a jammer through and through. Grab a bag of Tima and experience the complexity of Guji coffee.
