This is a milestone-esk coffee for Enjoy. At this point, we've clocked in over 1500 batches on our Typhoon roaster which is giving us a lot of confidence in purchasing a coffee like this and knowing we can really do it justice for you. Sebastian Ramirez is one of the premier producers of current and once again, just grateful to be connected with him and this coffee via my dude Gio Cucalon and Unblended. Here we go:

This is our second Gesha release to date and this time, we have one of the most beautiful representations of the variety via the expert detail and care of the White Honey process from Sebastian's farm, Finca El Placer. As told by Unblended, Sebastián is a fourth-generation coffee farmer with over 12 years of experience. He has a presence in multiple countries in Asia and Europe and has joined our mission to make coffee farming exciting. As a Mentor on the Young Producer Program, he brings his expertise to the table. Sebastian began as a traditional grower but eventually delved into fermentations and made connections within the industry. Nowadays, he is a master in carbonic maceration, coffee profiles, and varietals. We are honored to represent him and can confidently say that his coffees are anything but ordinary.

The Gesha Lavado White Honey CM coffee beans are processed with great care and attention to detail. The cherries are collected and sorted to ensure that 95% of them are ripe and 5% are semi-ripe. The beans then undergo anaerobic fermentation in 200-liter tanks at a constant temperature of 18°C, with CO2 injection and submersion in water with an oxygen pump for 48 hours. After fermentation, the beans undergo a two-phase drying process, which is carefully controlled and slowed down using shade netting. Finally, the beans are packaged in Grain-Pro bags and stabilized for 15 days. This meticulous process results in high-quality coffee that is sure to delight coffee lovers.

This involved and detailed process translates to the cup in a way that's hard to put into words. There is a depth and aromatic intensity in this coffee that is so vibrant and unique... easily one of the best coffees I've ever had in recent years. As soon as you open the bag you know you're about to experience something special. In the aroma you get hit with a deep berry note alongside florals and a tarragon-esk herbal quality. The cup profile of this is so fun and whoa-inducing... The hallmark gesha variety jasmine note is loud and proud up front, with lavender and a rad white grape quality. The body is coating and silky. As the cup cools, a sweet and sour lemon, or meyer lemon, or lemonadey sugary sweetness starts to jump out of the cup in a crisp and refreshing way. There's complexity and sweetness for days. Did we say sweet yet? Word.

This is our first coffee from Unblended and Sebastian Ramirez. It won't be our last. Limited quantities on this top top top top tier offering. Enjoy.
