As told by Yellow Rooster Coffee Imports: This coffee comes from the mountains of southern Santander, Colombia, a region renowned for its coffee-growing tradition. It's one of the oldest coffee regions of Colombia, having first received the seeds from nearby Venezuela along the northern tip of the Andes mountain chain.
We've been purchasing this blended lot from COOPSANTANDER, an organization founded in 1967 that brings together thousands of small producers. For more than five decades, this coop has been a cornerstone for the coffee-growing communities, guaranteeing the purchase of their coffee and promoting sustainable practices. Through the coop, coffee farmers gain access to: fair and stable market access, specialized technical assistance, sustainability programs, access to supplies and training. This strengthens the local economy and improves the quality of life for producer families. The coop acts as a direct bridge between coffee growers and the market, ensuring traceability, consistent quality, and fairer trade relationships. Each lot reflects the careful work of skilled hands and a shared commitment to excellence.
From the over 6,000 coop members, we've selected 12 coffees from hundreds of options and blended them together, emphasizing the brown sugar sweetness and balanced acidity the region is known for. This lot is a blend of Caturra and Castillo, grown between 1200-1750 MASL, mostly under shade, which is the most common form of farm management in Santander.
The cherries of this blended lot that the Yellow Rooster team has put together were hand picked and floated for ripeness. Then left in cherry for 12-24 hours of pre-fermentation before being pulped and laid out to dry on patios or raised beds.
The cup profile of this lot is such a familiar and easy drinking coffee. Citrus and cherry like sweetness dominate alongside notes of milk chocolate and caramels. Santander COOP makes a great morning cup, espresso, cold brew, etc. Just brew it up how you like and enjoy!

Shipping Days: We ship orders twice a week, on Tuesdays and Thursdays.
Shipping Method: All orders are shipped via USPS Priority Mail for prompt and reliable delivery.
Processing Time: Orders placed by 12:00 PM on Monday and Wednesday will be processed and shipped the following shipping day. Orders placed after this cutoff will be processed on the next available shipping day.
Tracking: Once your order has been shipped, you will receive a confirmation email with tracking information so you can follow its progress.
