Paola Trujillo grew up on her father’s farm, Patio Bonito, in Caldono, Cauca, a place that has been producing coffee for over 40 years. Her father, Don Carlos Trujillo, focuses on sustainable farming, while Paola brings her own expertise to the fermentation and processing side of things having spent many years previously working as a cupper and buyer in Nariño and Huila for an exporting company. After returning to the farm in 2022, she has innovated how they process their washed and natural coffees, including “thermal shock” and anaerobic modulations to their processes.
The total area of the farm is 11 hectares, with 9 hectares of coffee, or 47,000 coffee trees across 13 varieties, including Castillo, Colombia, and Pink Bourbon, Gesha, Typica, SL-28, Red Bourbon, Java, Bourbon "Aji", Sidra, Pacamara, Laurina, and Wush Wush. The Trujillo family are passionate in their pursuit of quality, and in their attention to detail in every aspect of the farm. According to the Trujillo's, all operations at Patio Bonito are grounded in three core values: food security, soil conservation and management, and coffee cultivation. The farm's mission is "to provide alternatives and training to farmers and students on the management, conservation, and exploration of natural resources and the environment," and the family's philosophy is, “The best legacy we can leave to our children is: love, knowledge, and a planet in which to live."
Wush Wush is a rare Colombian varietal which is believed to have originated in Kaffa, Ethiopia. That lineage is definitely supported in the flavor profile of this coffee. Big florals and citrus soda pop alongside some stone fruit sweetness. We generally see Wush Wush in the competition sphere of the coffee industry for its high complexity, and fruity / floral flavor profiles a la gesha. This lot is easily one of the higher scoring coffees we've been able to source.
This lot jumped off the cupping table for us and impressed even more when brewed. Big notes of lime and an effervescent citric acidity pop up front giving all the Sprite vibes while floral aromatics lift off the brew reminiscent of lavender. As you continue to sip and the cup cools a touch, the Apricot stone fruit sweetness starts to dominate with the acidity still giving the cup a crisp and refreshing character and 'wow' factor. This is a punchy and vibrant coffee from hot to cold and such an awesome representation of this incredible producer and variety.
