We are beyond thrilled to roll out our first coffee from the incredibly talented hands of Mafer and Carlos at Vinka Coffee. Carlos reached out to us some months back inquiring if we'd be interested in cupping through some samples. We were immediately impressed with their offer sheet and the level of data and detail for each of their offerings.
After getting the samples in, we roasted them up and cupped them out and the whole team was ecstatic. Absolute bangers. We landed on this lot of the Sidra variety as our debut of Vinka but trust... there will be more. Let's dig in!

Founded by Dr. Mafer Tapia (Ecology & Biodiversity) and Dr. Carlos Iñiguez (Natural Resources), university researchers & professors who chose to return to the land. At the foothills of Podocarpus National Park, where the montane forest intertwines with the inter-Andean dry scrub. At 1,640 meters above sea level, the humid morning fog and the dry afternoon breeze create a unique microclimate that imprints character into every bean. Our commitment comes from the conviction that producing specialty coffee is also an act of respect for the land. We regenerate soils, care for water, and protect biodiversity, because we know that true quality comes from balance. The 2026 harvest is our invitation to share with you the best of the Sidra variety: lots designed with patience and precision to reveal distinct sensory profiles, each with its own story. An experience that celebrates life, landscape, and passion for coffee.
This lot of the Sidra variety is perhaps the best representation of the variety we've ever tasted. Cherries were picked at peak ripeness, then undergo a two step fermentation. First, the Sidra cherries go through a solid-phase fermentation in cherry before being depulped with some mucilage left intact and fermented again in a submerged yeast inoculated medium for 48 hours. The coffee is then dried with that mucilage intact for the red honey designation.
This is one of those coffees that makes you light up and sprint to find someone to share a sip with. The aromatics are incredibly loud out of the gate with florals and candy sweet notes. In the cup, the florals continue and are accompanied by a cotton candy sweetness from hot to cold. As the cup starts to cool, super juicy tart notes of tamarind and a pointed malic acidity a la apple soda creep up in the profile. The body on this coffee is super slick and weighted and adds to the luxurious feel to this coffee.
This is an incredibly special coffee and absolutely thrilled to kick off our Ecuador season with this stunner.

Shipping Days: We ship orders twice a week, on Tuesdays and Thursdays.
Shipping Method: All orders are shipped via USPS Priority Mail for prompt and reliable delivery.
Processing Time: Orders placed by 12:00 PM on Monday and Wednesday will be processed and shipped the following shipping day. Orders placed after this cutoff will be processed on the next available shipping day.
Tracking: Once your order has been shipped, you will receive a confirmation email with tracking information so you can follow its progress.
