Welcome to that IYKYK (if you know, you know) life. IYKYK represents a new chapter for Enjoy. Modern Competition-Grade Coffees that are Typhoon roasted to get that soluble 'ultralight' profile. The aim is to showcase what we see as the best of the best while still giving YOU an easy to brew starting point.
Our debut release features a super special coffee to Enjoy in Diego Bermudez's Letty Gesha. If we rewind a few years back to The New York Coffee Festival in 2023, Justin was representing Enjoy at a coffee event for the very first time and was invited to a tasting event featuring the legends, Manhattan Coffee Roasters. In coffee careers, we often have those milestone moments that set or change the direction of ones path. This event was one of those more recent monumental moments in Justin's 16+ years in coffee. At this event, Justin was first served an espresso of this Letty Gesha that not only blew his mind on a quality level, but, what stood out most was the flavor separation and clarity. He immediately walked back up to the barista who turned out to also be the production roaster at the time, Paolo, to figure out what was going on.
Long story short, this is where Justin first learned about the Typhoon roasting system and its ability to create such dynamic and spacious cup profiles with its rapid convective heat transfer. Each and every coffee he tried from Manhattan was 1. a banger, but 2. quality aside, there was a through-line of flavor accessibility that was unlike anything he'd experienced before. Not to mention, those coffees were a month plus off roast and vibrant as ever. So, Justin did what any insane person with a business idea in mind would do, and bought a Typhoon.
Fast forward two years (we installed our Typhoon 9/1/24) and here we are debuting a new line of our most top tier coffees with the very same coffee that set us on this course. Let's dig into Diego's Letty Gesha.
Diego Bermudez is easily one of the most prolific and impactful producers and processors in the world of specialty coffee in the last 5+ years. He has been a name in the world stage of coffee competition for years now and generally, if you see 'Bermudez' on a bag... just buy the bag as his range of processes coming off of his farm Finca El Pariso are nothing shy of excellent.
The Letty Gesha (named after his daughter) is easily one of our favorite coffees we've ever had and tasted each and every time we get our hands on a bag. Here's the scoop on this incredible gesha lot: The Gesha varieties adapted to the Cauca region have been characterized by having a delicate, citric and aromatic profile, which, thanks to the climatic conditions, the altitude, the terroir and the intense rains throughout the year, allow them to develop a brilliant profile that highlights the quality of this variety.
The process of this profile begins with the harvest of the coffee cherries at their optimum ripening point and with a higher concentration of sugars in the mucilage. Then cherry is depulped and fermented in wet processing with tropical yeast, to increase the the fruity flavor and then the coffee is washed with thermal shock process (one invented by Diego and his brother Alex Bermudez). Dried in a dehumidifier to remove humidity, preserving the soft notes of the coffee and avoiding the over-oxidation of the coffee seed and stopping the metabolic processes to avoid over-fermentation. Stabilization and storage in a cool place... until the coffee is set for the dry mill.
In the cup you can expect a seriously complex and refined profile with such a luxurious texture and tactile character. From the second you open the bag, you're hit with some loud florals, dank cannabis, and stone fruit aromatics. These only get exaggerated when ground and bloomed. As you sip, peachy and nectarine sweetness is complemented with floral undertones and a tart pineapple-like acidity. The cup cools with more stone fruits along with a high fixed oolong tea finish.
