This lot is named after the collaboration of Diego Horta (Finca La Primavera) and Edier Perdomo (Finca Los Pinos) who both took their very best Pink Bourbon cherries and combined them to form this incredible lot. We are massive fans of Pink Bourbon, and the diversity and complexity of cup profiles the variety can produce. This lot is no joke, a super interesting and unique profile that has massive 'whoa' and 'wow' vibes. Let's dig in:
As told by Forest: Blessed with rich volcanic soil and a perfect altitude, Huila proved to be the ideal playground for this vibrant coffee variety to thrive. The Pink Bourbon quickly captured the hearts of local farmers with its exceptional cup profile, boasting flavors of sweet caramel, delicate florals, and a hint of tropical fruitiness. Its ability to withstand the region's diverse microclimates and adapt to varying altitudes made it a darling among growers in Huila, who lovingly tended to their coffee plants, nurturing them with care and dedication. Today, the Pink Bourbon continues to flourish in Huila, a testament to the harmonious marriage between nature's gifts and the labor of passionate coffee cultivators.
The process of the Pink Borbon Creation coffee begins with the meticulous selection of ripe Pink Borbon cherries, ensuring exceptional quality from the farms of Los Pinos and La Primavera in Huila, managed by farmers Edier Perdomo and Diego Horta. The cherries then undergo a precise two-stage fermentation: 24 hours in whole cherry to develop initial sweetness, followed by 36 hours in mucilage to enhance depth, complexity, and fruity character. Following fermentation, the seeds are carefully washed to remove all traces of mucilage before being dried on raised beds for 15 days. Finally, the seeds are milled and stabilized in GrainPro bags for 30 days, allowing flavours to mature and harmonise. Pink Borbon Creation coffee exemplifies the dedication and expertise in coffee processing, offering a distinctive and delightful coffee experience.
Boom. This coffee has a super impressive cup profile. Sugary sweetness dominates with stone fruits, florals, tropical hints and ginger?! In the cup we're getting an apricot-like acidity thats round but present, with subtle mixed floral notes alongside a candied ginger (like those ginger chews) note which adds such a rad complexity to the cup. Tropical fruit notes and a long and lasting honey aftertaste rounds it all out. We feel like this lot has elements of all the 'types' of Pink Bourbon profiles we love, all in one. Hyped.
