Thrilled to bring back an exciting lot of one Enjoy's homies and fan favorite producer, Juan Puerta of Sens Coffee. If you don't know, Juan Puerta is the brain and man behind the Osmotic Dehydration process (more below) which yields an insanely sweet, and fruited cup while maintaining a drinkability that few other co-fermentation processed coffees have. This is our 4th Osmotic Dehydration release from Juan (Previous releases include Rose \u0026amp; Lychee, Mango, and Araza) and this lot of Mandarin is summer in a cup. Let's dig in! \u003cbr\u003e\u003cbr\u003e\u003cspan\u003eJuan and the Yellow Rooster team visited us at Enjoy in May of '25 and Juan, Joel and Frank were riffing on this new project featuring a Colombian grown fruit instead of a fruit that is native to North America and North American pallets. I was immediately on board. Many coferments that are out there require producers \/ processors to import fruits that are more common to the North American pallet (peach, strawberry, blueberry etc.) only to utilize them in this process and then export the coffee back this way.... Not only is this just a huge ask and risk for the producer, but also supports a power dynamic that we're just not about here at Enjoy. So the idea of Juan being able to utilize a very common fruit native to Colombia was an easy yes for us. Our most recent Araza release of Juan's was the first of this project and this lot of Mandarin continues the theme.\u003cbr\u003e\u003cbr\u003eWhat in the world is Osmotic Dehydration? I'd check \u003ca href=\"https:\/\/www.instagram.com\/p\/DF0bKrdvKX0\/?hl=en\"\u003ethis video\u003c\/a\u003e out but most succinctly, there is a glucose based hypertonic solution in which fruit \/ flowers etc. are added which creates an osmosis gradient.  Coffee is added to this infused solution and it actively interacts with the water content of the coffee via a co-fermentation and boom, an insane coffee time has been created. \u003cbr\u003e\u003cbr\u003eThe Mandarin lot we have here is so saturated in sweetness. This is one of those coffees that sings hot or would also make an insanely refreshing flash brew \/ iced coffee. This cup is soo silky and coating while having a subtly effervescent acidity. We get loud mandarin notes and orangina up front with a turbinado-like sugar foundation. \u003cbr\u003e\u003cbr\u003eJuan is 100% a homie of Enjoy and we will always be featuring some of his incredible experiments.
