This may be the first ever single variety Tabi lot I've come across and so hyped it's from the father of Cofinet himself, Jairo Arcila. Let's dig in!

Cofinet holds a special place in Enjoy's story and mad grateful to the homie Ana, for helping us grow with staple coffees as well as some more exotic lots like we have here. This lot hails from the founder of Cofinet, Jairo Arcila. As told by Cofinet:

Jairo Arcila is a third-generation coffee grower from Quindio, Colombia. He is married to Luz Helena Salazar and they have two children together, Carlos and Felipe Arcila. Jairo’s first job was at Colombia’s second-largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019.

Jairo has received great advice and guidance from his sons who are now experts in producing Specialty Coffee. With their help, Jairo has greatly improved the picking, sorting, and processing of his coffees. His sons have also guided Jairo in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Tabi, Papayo, ,and Gesha growing across his farms. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavor profiles.

Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast! But most importantly, he enjoys spending time with his family.

Tabi is a newer hybrid to the industry, having been developed in 2002. It is a cross between Bourbon, Typica, and Timor Hybrid. Tabi was developed as a part of the research to develop a variety that is disease resistant while maintaining good cup quality. Over the last few years this has become a favorite hybrid variety because it provides producers with an excellent disease-resistant choice while also having a very high cup quality potential.

This lot we have here is such a fun one. This is one of those coffees I deem 'sessionable' because it's an easy sipper that begs you to take another, and another.  Super crisp and refreshing while maintaining balance from hot to cold.  In the cup, your hit with a pointed citric acidity that is rounded out by stonefruits, orange marmalade-like sweetness and caramel foundational flavors.  Expect notes of juicy tangerine, orange marmalade, apricot, and caramels in this refreshing cup.  Enjoy it hot, iced, and anyway you see fit, Jairo's Tabi lot just delivers cup after cup.
